Utah’s HLTH Code Offers Solution to America’s Metabolic Health Crisis

Millions of Americans are silently battling metabolic dysfunction, a widespread health issue affecting nearly 90% of adults across the country. Despite efforts to maintain a healthy diet and lifestyle, many people experience unexplained weight gain, fatigue, mental fog, and a general sense of being unwell.

Since the U.S. government released its first official dietary guidelines in 1977, significant changes have occurred in how food is produced and consumed. Healthy fats have been vilified while processed carbohydrates have become a dominant part of the American diet. Food manufacturers replaced fats with sugar and refined starches in nearly every product, from breakfast cereals to salad dressings. This shift has contributed to a dramatic rise in obesity, type 2 diabetes, fatty liver disease, and hormonal imbalances.

Joel Bikman, a senior nutrition expert, explains that today’s population faces a paradoxical situation of both overnutrition and malnutrition, with widespread metabolic disorders undermining overall health.

While carbohydrates are not inherently harmful, the type and amount consumed matter greatly. Americans consume an average of over 300 grams of carbohydrates daily, mostly from ultra-processed foods. Excessive carbohydrate intake causes elevated insulin levels—a fat storage hormone—and can lead to insulin resistance, a root cause of many chronic diseases.

Bikman notes, “Among the three macronutrients, carbohydrates are the least needed by the average adult and can be particularly problematic for those with metabolic issues.”

Traditional dieting methods, such as calorie restriction or skipping meals, often backfire. While such approaches may initially result in weight loss, they typically come at the expense of lean muscle mass, which is crucial for maintaining metabolic health over time.

“Losing lean muscle is one of the most detrimental effects of aging,” Bikman said. “Muscle plays a central role in managing energy, burning fat, and protecting against chronic diseases. When muscle mass decreases, metabolism slows, strength diminishes, and fat loss becomes even more difficult, creating a frustrating cycle.”

Rather than reducing fat intake, people should prioritize consuming healthy fats. Sources such as coconut oil, ghee, MCT oil, and olive oil support hormone production, brain function, and metabolic flexibility. Paired with complete proteins like collagen, whey, and egg whites, these nutrients help the body burn fat, maintain energy, and preserve muscle.

However, finding convenient meals that strike the ideal balance of protein, fat, and minimal carbohydrates can be challenging, especially for busy individuals.
